Moist sponge cakes made with almonds and egg whites. Basic recipe here - it says it makes 12 but i got nearly 4 dozen small ones out of it!
I added an espresso and vanilla extract to one batch, and blueberries and lime zest to the other.
Macarons
Ottlenghi recipe, filled with praline, chocolate and caramel. Much too sweet for me! I’ll try with coffee or lemon filling next time, and make them smaller - I can’t finish a whole one.
Squillionaire cake
Similar to millionaire shortbread but with gooey condensed-milk caramel and a digestive biscuit base.
