Top tofu tip: soak out excess moisture with kitchen paper then dust with cornflour before frying for crispy goodness. The cornflour also helps thicken up the sauce, making a yummy sticky glaze.

- Cook 150ml of sticky rice in 200ml of water and season with seven-spice and salt
- Marinate diced chestnut mushrooms and tofu in teriyaki sauce (tablespoon each of soy, mirin and sesame oil) and quickly fry
- Mix with rice, mould into triangle with hands, roll in furikake and salt then fry in more teriyaki glaze
