Chile-bean stuffed baby peppers
Not really sure what to name this, I made it up based on the contents of our fridge but it worked well - really tasty.
Fry a red onion and add poblano chillies (canned in brine - try jalapenos if not available), tinned tomatoes, cannelini beans and a dash of chipotle sauce. Bubble away for a bit and stir in some crumbled feta cheese, oregano and coriander. Meanwhile chargrill 4 baby sweet peppers on a griddle then slice off the tops and stuff with the bean mix. Pop in the oven to cook the peppers through. Serve with rice, sweetcorn and the rest of the stew poured over the top.
